In addition, our bet has been to pair with seafood products a vermouth with character. Made from Bobal grapes with Mediterranean herbs.
First of all, what should we know about this drink?
Vermouth is in fashion, that is unquestionable. It is a drink that is coming back even though it never left. Fortunately now we are not as carried away as before by the advertising of Martini boys, and the consumer is looking for new sensory experiences.
In the Valencian Community, fantastic vermouths have been made for more than a century. It is also a moderately alcoholic drink that invites you to socialize. Let’s go for a vermouth!
It is an elaboration based on wine macerated with herbs, which is served before meals as an aperitif. The word comes from the German word wehrmut – a word composed of Wehr (defense) and Mut (courage). This possible etymology is linked to the siege of a castle in the Middle Ages. The idea was to make a drink that would give the warriors the courage to defend the castle.
Today’s vermouths have quite a few secret ingredients, or at least winemakers are very reserved when it comes to disclosing their composition, in order to differentiate the nuances of the product in a highly competitive market.
There is a classic formulation:
- white wine
- caramel
- sugar
- alcohol
- a combination of spices: wormwood, cinnamon, orange peel, gentian, cardamom, clove, sage, coriander, star anise, ginger, chamomile, juniper, thyme, vanilla…
The important thing now is to experiment and engage the consumer. A strategy that is working. In fact, the vermouth we offer in May is very particular. We tell you about it now.
Celebrate vermouth time at Balandros and Chiringuito del Club Nautico
During the month of May, from 13 to 23, we will promote the vermouth hour in our restaurants. We present two different offers for you to choose the one that best suits you or, maybe you like both and want to repeat. Who knows.
The vermouth we will offer is special. It is Descaro, vermouth from Bodegas Nodus (Utiel-Requena) which, under the technical direction of Gonzalo Media, is made with Bobal wine from organic harvest.
Its intense cherry red color already betrays part of this origin. It does not lose its vermouth character at any time, with a dance of Mediterranean herbs, spices (clove, cardamom, coriander) and clear citrus notes, with aromas typical of Bobal. The palate is fresh, friendly, with great intensity and length. It has an orange citrus finish with a slight bitterness from the hops present in its formula.
This vermouth will be paired in a different way. In fact, at Balandros Restaurant it will be accompanied by an oyster and will be priced at 5 €.
On the other hand, in the Chiringuito del Club Nautico we will offer the vermouth Descaro with anchovies in vinegar. A classic combination that never fails. The price here will be 3 euros.
